Mashed Cauliflower:

  • 1 cup mashed cauliflower (from Day 4 or freshly made)

  • 1 tablespoon butter (for reheating, optional)

  • Pinch of sea salt (optional)

  • Pinch of freshly ground black pepper (optional)

Preparation

Reheat the Pot Roast:

  1. Stovetop Method:

    • Add the leftover shredded pot roast and ¼ cup of the pot roast juices or beef broth to a skillet.

    • Heat over medium heat for 4-5 minutes, stirring occasionally until warmed through.

    • If the pot roast looks dry, add a little more broth or pot roast juice.

  2. Microwave Method:

    • Place the shredded pot roast in a microwave-safe dish.

    • Add 2-3 tablespoons of the pot roast juices or beef broth.

    • Cover loosely with a microwave-safe lid or damp paper towel.

    • Microwave on medium power for 2-3 minutes, stirring halfway through until heated.

Reheat the Mashed Cauliflower:

  1. Stovetop Method:

    • Add the mashed cauliflower to a small saucepan over medium heat.

    • Stir in 1 tablespoon of butter if desired.

    • Cook for 2-3 minutes, stirring frequently, until warmed through.

  2. Microwave Method:

    • Place the mashed cauliflower in a microwave-safe bowl.

    • Add 1 tablespoon of butter if desired for extra creaminess.

    • Microwave on medium power for 1-2 minutes, stirring halfway through until hot.

Assemble and Serve:

  1. Plate the Pot Roast and Cauliflower:

    • Transfer the reheated pot roast to one side of the plate.

    • Spoon the mashed cauliflower onto the other side.

  2. Optional Garnish:

    • Garnish with fresh parsley, chives, or a sprinkle of Parmesan cheese for extra flavor.

Ways to Get Kids Involved:

  • Stir the Pot Roast: Let kids help stir the pot roast while reheating.

  • Mash the Cauliflower: If making fresh mashed cauliflower, allow them to mash it with a fork or masher.

  • Arrange the Plate: Encourage them to arrange the pot roast and cauliflower nicely on the plate.

  • Taste Test Seasoning: Let them taste the mashed cauliflower and decide if it needs more salt or butter.

  • Name the Dish: Have them create a fun name like “Beefy Bliss Bowl” or “Cauliflower Cloud Delight.”

Simple Flavor Boost Options (Optional):

  • Garlic Herb Butter Drizzle: Melt garlic butter and drizzle over the mashed cauliflower for extra richness.

  • Horseradish Kick: Add a spoonful of sugar-free horseradish to the pot roast for a spicy bite.

  • Parmesan and Thyme Sprinkle: Top the mashed cauliflower with grated Parmesan and a pinch of fresh thyme.

  • Balsamic Glaze Drizzle: Drizzle sugar-free balsamic glaze over the pot roast for a tangy, sweet touch.

  • Creamy Mustard Sauce: Serve the pot roast with a quick mustard cream sauce for a tangy contrast.

  • Crumbled Bacon on Cauliflower: Add crumbled bacon bits over the mashed cauliflower for a smoky crunch.
