Ingredients

Cucumber Boats:

  • 1 medium cucumber, halved lengthwise and seeds scooped out

  • 3 tablespoons cream cheese (full-fat, softened)

  • 1 tablespoon fresh dill, finely chopped (or ½ teaspoon dried dill)

  • 1 teaspoon fresh lemon juice (optional for added brightness)

  • Sea salt and freshly ground black pepper, to taste

Preparation

Prepare the Cucumber:

  1. Slice & Scoop: Slice the cucumber in half lengthwise. Use a small spoon to scoop out the seeds, creating a “boat” for the filling.

  2. Pat Dry: Lightly pat the inside of the cucumber dry with a paper towel to prevent excess moisture.

Make the Filling:

  1. Mix Cream Cheese & Dill: In a small bowl, mix softened cream cheese with fresh dill, lemon juice (if using), and a pinch of sea salt and pepper. Stir until smooth and well combined.

  2. Taste & Adjust: Taste and adjust seasoning as needed.
