About the Recipe
A simple, nutrient-dense breakfast featuring perfectly boiled eggs paired with creamy avocado slices, lightly seasoned with sea salt and drizzled with high-quality olive oil. This meal is loaded with healthy fats and protein to keep you energized.

Ingredients
2 large eggs (organic, pasture-raised preferred)
½ small avocado, sliced
1 tablespoon extra-virgin olive oil
Pinch of sea salt (Maldon or flaky sea salt preferred)
Freshly ground black pepper (optional)
Preparation
Boiled Eggs:
Boil Eggs: Place eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, turn off the heat, cover, and let eggs sit for 9-10 minutes for a firm yolk.
Cool & Peel: Transfer eggs to a bowl of ice water and let sit for 3-4 minutes to cool. Peel under running cold water for easier removal.
Assemble the Plate:
Slice Avocado: Cut avocado in half, remove pit, and slice half of the avocado thinly.
Arrange & Season: Plate boiled eggs alongside sliced avocado. Drizzle olive oil over avocado and eggs, then sprinkle lightly with sea salt and optional black pepper.
Tips to Make it Even Easier:
Pre-Boil Eggs: Boil a batch of eggs at the beginning of the week and store peeled in an airtight container for quick breakfasts.
Pre-Slice Avocado: Slice avocado ahead of time and store in an airtight container with lemon juice to prevent browning.
Use an Egg Slicer: Use an egg slicer for perfect slices in seconds and to make plating more elegant.
Quick & Simple Flavor Boost Options (Optional):
Lemon & Chili Drizzle: Squeeze fresh lemon juice and add a pinch of chili flakes over the avocado for a zesty kick.
Garlic-Infused Olive Oil: Drizzle garlic-infused olive oil over eggs and avocado for a rich, aromatic finish.
Cilantro & Lime Topping: Sprinkle chopped cilantro and a squeeze of lime over avocado for a fresh burst of flavor.
Za’atar Seasoning: Add a sprinkle of za’atar (a Middle Eastern spice blend) over the eggs and avocado for earthy, herby notes.
Feta & Herb Sprinkle: Crumble a small amount of feta over the avocado with fresh parsley or chives for added creaminess and a salty bite.
Smoked Paprika & Olive Oil Finish: Dust eggs and avocado lightly with smoked paprika and drizzle with olive oil for a smoky depth.
