About the Recipe

Ingredients

  • 2 large eggs (organic, pasture-raised preferred)

  • ½ small avocado, sliced

  • 1 tablespoon extra-virgin olive oil

  • Pinch of sea salt (Maldon or flaky sea salt preferred)

  • Freshly ground black pepper (optional)

Preparation

Boiled Eggs:

  1. Boil Eggs: Place eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, turn off the heat, cover, and let eggs sit for 9-10 minutes for a firm yolk.

  2. Cool & Peel: Transfer eggs to a bowl of ice water and let sit for 3-4 minutes to cool. Peel under running cold water for easier removal.


Assemble the Plate:

  1. Slice Avocado: Cut avocado in half, remove pit, and slice half of the avocado thinly.

  2. Arrange & Season: Plate boiled eggs alongside sliced avocado. Drizzle olive oil over avocado and eggs, then sprinkle lightly with sea salt and optional black pepper.
